Hey there what’s going on? It’s Lisa here at Happy Foods. How you doing? It’s dinner time so I just thought I’d take you along and show you what it is that I’m making. Tonight we’re having something special. We’re having a broccoli pasta alfredo.

It’s going to be kind of like a one pot dish and it’s going to be really really tasty and a much healthier version than traditional alfredo.

Ingredients for Broccoli Pasta Alfredo

Ingredients

  • One box of pasta (whatever you want, gluten-free or not)
  • Approximately 4 cups of broccoli florets
  • 2 cups of milk (any kind, almond milk used)
  • A couple cloves of chopped up garlic
  • Roughly about a half a cup of nutritional yeast
  • Vegetable oil
  • Salt
  • Pepper

Instructions for Broccoli Pasta Alfredo

Instructions

  1. Get a pot over here with some boiling water for the pasta.
  2. Add one box of pasta (whatever you want) into the boiling water.
  3. Set a timer for eight minutes for the pasta cooking.
  4. Get a pan on kind of medium medium-high heat that I use for the sauce.
  5. After eight minutes of pasta cooking, add in a big old bowl of some broccoli, probably about four cups of some broccoli florets, right in the last minute maybe the last minute or two the pasta needs to cook.
  6. Strain the pasta and broccoli.
  7. For the sauce, add two cups of milk to the pan.
  8. Add a couple cloves of chopped up garlic to give it a nice flavor right in the milk as it’s heating up.
  9. Let the milk and garlic come up to kind of a nice simmer for just like maybe a couple minutes or so to get that garlic going and just get it nice and hot.
  10. When the timer goes off from the pasta, add the broccoli florets and set this timer for another two minutes just to get the water back up to temperature by adding all that broccoli and basically it’ll cook for about a minute.
  11. To this, I’m going to add in roughly about a half a cup of nutritional yeast.
  12. Turn my heat up just a tad and let this kind of thicken up a little bit.
  13. Add in a little bit of salt and pepper.
