Easy, Healthy Grilled Chicken and Broccoli Bowl with Creamy Garlic Sauce
So there you go, we’ve got grilled chicken, a broccoli bowl, with a creamy garlic sauce. How healthy is that? Hi everyone, I’m Rick. Today we’re doing a flavour bursting, easy, healthy dinner. Really easy, really healthy, really tasty. And we’re going to make a creamy garlic sauce using Greek yogurt.

If you don’t like garlic, you can use a teaspoon of Dijon mustard and change it to a Dijon sauce. It’s that simple this.
It’s a fully changeable sauce.
It’s a very quick one, and it’s very easy. I mean, it really is easy.
You don’t get much simpler than that sauce.
That is just ridiculously healthy. Delicious dinner right there.

It’s a lovely flavour through there with the parsley. Delicious.

Ingredients
- Broccoli (chopped into florets)
- A couple of chicken breasts
- Greek yogurt
- Parsley (about a tablespoon, chopped)
- Garlic
- Lemon (about a tablespoon)
- Paprika (about a quarter of a teaspoon)
- Olive oil (a little bit)
- Salt
- Pepper (black pepper)
- Rice (for serving)
- Canola (for serving)
- Dijon mustard (optional, as a substitute for garlic)
- Chili (optional, for seasoning)

Instructions
- Want a little bit of salt on that chicken.
- Pepper on there. A little bit of black pepper.
- Chop about a tablespoon of parsley. Run your knife over.
- Squeeze the garlic through a garlic press into the Greek yogurt.
- Add parsley to the yogurt mixture.
- Add about a tablespoon of lemon to the yogurt mixture.
- Add about a quarter of a teaspoon of paprika to the yogurt mixture.
- Give that a mix in.
- Add a little bit of olive oil in a pan.
- Put a flame on low. Very, very low.
- Take our chicken breast, which we’ve seasoned. And we’re just going to put on there.
- Take our seasoning. Our salt and pepper. And a little bit on this side.
- Cook it until it’s about 75 degrees inside. That’s 165.
- Wait for it to turn opaque around there. Around the sides. You’ll see it coming up.
- Flip it.
- Turn them over and start them off this side.
- Turn them back again.
- Up it on its side. Put it up against the side of the pan with your tongs. And then bring it back in.
- And then up on the top. And then over on that side that we haven’t done. And then back on there.
- Put a couple of lines on there. That’s flame off for the chicken.
- Put the chicken in something and cover it over with foil. And let it rest.
- Bring water up to the boil for steaming broccoli.
- Put the broccoli in.
- Stick a lid over.
- Steam for about seven or eight minutes only.
- Test it with a fork if you want. Or you can just turn it off.
- Take our chicken. And we’re just going to slice it.
- Put rice on there.
- Take some of our broccoli in there.
- Put that beautiful chicken that we’ve just cooked on there.
- Drizzle some sauce on.
- Put some sauce on there. As much or as little as you want.

Cooking Tips
If you don’t like garlic, you can use a teaspoon of Dijon mustard and change it to a Dijon sauce.
You can put anything on, to be honest. You know, you can put your paprika on there. You can put chili on. You can put anything on. That’s up to you.
Don’t stress. If you don’t like parsley, put something else in.
You can go any which way around on this cook. Entirely up to you. Cook your chicken first. Let the chicken rest whilst you steam the broccoli. If you’ve got a couple of rings, you can do both together. Not a problem. We are going to do it on one ring as usual. So, we’re going to cook the chicken first. We’re going to cover it with foil. And we’re going to steam the broccoli.
What we don’t want to do is over flavor this with this nice, subtle garlic sauce. But it’s up to you.
Nice and steady. We’re just going to cook it until it’s about 75 degrees inside. That’s 165. And the best way, obviously, is with a thermometer to check it.
Now, you can flip it as many times as you want. It’s not just a one flip over. We have got to get the heat through the chicken breast. No full poisoning.
For all the people that don’t have a steamer, colander will fit over there. The lid’s not going to seal it. Properly. But it’s still going to steam. It’s either that or you boil it. Well, I don’t want to boil it.
It is going to take possibly a minute longer. So, we’re going to probably steam this for about seven or eight minutes only.
When you’ve had a little while on there, you can test it with a fork if you want. Or you can just turn it off. It depends how soft you want your broccoli. Now, I want crunchy in mine.
You can do salt, pepper, chilli flakes, whatever.
Watch yourself on there with the lemon juice. Actually, you can turn it too sour.
Serving Suggestions
I’m going to serve it with rice, because I’ve got loads of rice, but you can serve it with canola, anything like that. Not a problem.
Served over rice with that really nice creamy sauce made out of yoghurt and garlic, a bit of parsley.
