Easy Healthy Grilled Chicken and Broccoli Bowl with Creamy Garlic Sauce

So there you go, we’ve got grilled chicken, a broccoli bowl, with a creamy garlic sauce. How healthy is that? Hi everyone, I’m Rick. Today we’re doing a flavour bursting, easy, healthy dinner.

Really easy, really healthy, really tasty. And we’re going to make a creamy garlic sauce using Greek yogurt. If you don’t like garlic, you can use a teaspoon of Dijon mustard and change it to a Dijon sauce. It’s that simple this.

You don’t get much simpler than that sauce.

It’s a bit of like a Mediterranean-type flavor, this one. It’s superb.

Ingredients

  • Broccoli (chopped into florets)
  • Chicken breasts (a couple of)
  • Greek yogurt
  • Parsley (about a tablespoon, chopped)
  • Garlic
  • Lemon
  • Paprika (a little bit, about a quarter of a teaspoon)
  • Salt
  • Pepper (black pepper)
  • Olive oil (a little bit)

Cooking instructions for grilled chicken and broccoli bowl

Instructions

  1. Want a little bit of salt on that chicken.
  2. Put a little bit of pepper on there.
  3. Chop the parsley over.
  4. Squeeze the garlic through a press into the Greek yogurt.
  5. Put the parsley in there.
  6. Add about a tablespoon of lemon in there.
  7. Add about a quarter of a teaspoon of paprika.
  8. Give the sauce a mix in.
  9. Grab yourself whatever pan you’re going to use.
  10. Have a little bit of olive oil in there.
  11. Put the flame on low.
  12. Take our chicken breast, which we’ve seasoned, and just put on there.
  13. Take our seasoning, our salt and pepper, and a little bit on this side.
  14. Cook it until it’s about 75 degrees inside.
  15. Wait for it to turn opaque around the sides.
  16. Flip it.
  17. After a couple of minutes, turn them over and start them off this side.
  18. Turn them back again.
  19. Up it on its side.
  20. Put it up against the side of the pan with your tongs.
  21. Bring it back in.
  22. Up on the top.
  23. Over on that side that we haven’t done.
  24. Back on there.
  25. Flash some colour on there, or take it straight out.
  26. Put a couple of lines on there.
  27. Flame off for the chicken.
  28. Grab yourself something to put it in.
  29. Cover the chicken over with foil and let it rest whilst we do the broccoli.
  30. Bring water up to the boil.
  31. Put our broccoli over there.
  32. Stick a lid over.
  33. Steam this for about seven or eight minutes only.
  34. Test it with a fork if you want.
  35. Turn it off.
  36. Take our chicken and slice it straight through there.
  37. Serve a bit of rice on there.
  38. Take some of our broccoli in there.
  39. Drizzle some sauce on.
  40. Put sauce on there.

Cooking Tips

If you don’t like garlic, you can use a teaspoon of Dijon mustard and change it to a Dijon sauce.

You can put anything on, to be honest. You can put your paprika on there. You can put chili on. You can put anything on. That’s up to you.

You can go as big or as small as you like. Don’t stress. If you don’t like parsley, put something else in.

You can go any which way around on this cook. Entirely up to you. Cook your chicken first. Let the chicken rest whilst you steam the broccoli.

If you’ve got a couple of rings, you can do both together. Not a problem.

The best way, obviously, is with a thermometer to check it.

You can flip it as many times as you want. It’s not just a one flip over.

For all the people that don’t have a steamer, colander will fit over there.

The lid’s not going to seal it properly. But it’s still going to steam. It’s either that or you boil it. Well, I don’t want to boil it.

It depends how soft you want your broccoli.

You can do salt, pepper, chilli flakes, whatever.

Watch yourself on there with the lemon juice. Actually, you can turn it too sour.

Serving Suggestions

You know, I’m going to serve it with rice, because I’ve got loads of rice, but you can serve it with canola, anything like that. Not a problem.

Take our chicken and slice it straight through there.

Bit of rice on there like that.

Take some of our broccoli in there.

Drizzle some sauce on.

As much or as little as you want.

Served over rice with that really nice creamy sauce made out of yoghurt and garlic, a bit of parsley.

Simple dinner. Easy.
