  • white flour
  • whole wheat flour
  • baking powder
  • salt
  • maple sugar

For the wet ingredients

  • ricotta cheese
  • Vanilla
  • Whole milk
  • two egg yolks
  • egg whites

  1. So I have the egg whites over here that are the other part of the egg yolks, and I’m going to whip them, which will make them soft.
  2. I’m going to aim for soft peaks.
  3. I’m going to mix all her dry ingredients together.
  4. Olivia is going to mix all her wet ingredients together.
  5. I am mixing the wet and dry mixtures together right now. To form pancake batter.
  6. You’re going to carefully fold them in.
  7. We don’t want to mash them.
  8. We want to fold them in nicely.
  9. Carefully just move the spatula around so you’re folding the mixture all together because we just put all of this air in there.
  10. We’re going to go and turn on our griddle on the stove here.
  11. Now we have some butter here, which I’m going to just use to grease here.
  12. I have a quarter measuring cup here and I have my griddle on and I’m going to carefully put the pancakes on the griddle.
  13. We’re going to let these cook.
  14. It’s going to be about two or three minutes on the first side.
  15. Then we’re going to flip them over.

You can also use an electric mixer if you have that, or a stand mixer.

You have to be very careful because the top is still a little bit wet.

You want to be very gentle when you use a spatula and kind of flip them over.

Sometimes it can be hard if you’re right-handed to get all of them on there. And on one side, you have to switch to your left hand or vice versa.

Serving Suggestions

We added maple syrup and strawberries to it.

You could add other stuff like powdered sugar or butter, anything you want.

Blueberries.

Avocado.
