How to Make Brookies: A Delicious Half Brownie Half Cookie Treat
Hey everybody! It’s Sam here from, and today I’m showing you how to make Brookies. Brookies are a fun kind of unique dessert that are so named because they’re half brownie and half cookie. Now this recipe is super simple, so let’s get started.

Brookies are a fun kind of unique dessert. This is going to help make these brookies nice and soft and chewy. It helps make the resulting recipe nice and chewy. I love using an extra yolk in a lot of my recipes. I love having extra chocolate chips in my brownies. Man, this is still warm, but it looks so good.

Ingredients

For the Cookie Portion
- 3/4 cup of unsalted butter
- 2/3 cup of tightly packed brown sugar
- 1/4 cup of white sugar
- one large egg
- one large egg yolk
- a teaspoon of vanilla extract
- 2 cups of all-purpose flour
- 1 teaspoon of cornstarch
- 3/4 teaspoon of salt
- 1/4 teaspoon of baking powder
- 1 cup of semi-sweet chocolate chips
For the Brownie Batter
- 12 tablespoons of unsalted butter
- 1/2 cup of semi-sweet chocolate chips
- 1/2 cup of cocoa powder
- 1 cup of tightly packed brown sugar
- 1/2 cup of granulated sugar
- 2 large eggs
- an additional egg yolk
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of salt
- 1 cup of all-purpose flour
- 1/2 cup of mini chocolate chips
Instructions

- Pre-heat your oven to 350 degrees Fahrenheit.
- Start by making the cookie portion of our brookies.
- Melt 3/4 cup of unsalted butter.
- Add 2/3 cup of tightly packed brown sugar and 1/4 cup of white sugar to our butter.
- Stir everything together.
- Add one large egg plus one large egg yolk.
- Add a teaspoon of vanilla extract.
- Stir everything together.
- Set your wet ingredients aside.
- In a separate bowl, add 2 cups of all-purpose flour, 1 teaspoon of cornstarch, 3/4 teaspoon of salt, and 1/4 teaspoon of baking powder.
- Stir everything together.
- Stir our dry ingredients into our wet ingredients until they’re completely combined.
- Stir in 1 cup of semi-sweet chocolate chips.
- Set this cookie dough to the side for now.
- Prepare our brownie batter next.
- In a large heatproof bowl, add 12 tablespoons of unsalted butter.
- To the butter, add 1/2 cup of semi-sweet chocolate chips.
- Heat it in our microwave in 20 second increments, stirring really well in between until the butter and chocolate are completely melted and your mixture is smooth.
- Once these are melted, stir in 1/2 cup of cocoa powder.
- Add 1 cup of tightly packed brown sugar and 1/2 cup of granulated sugar.
- Stir these together.
- Add 2 large eggs, plus an additional egg yolk.
- Add 1 teaspoon of vanilla extract.
- Stir everything together really well.
- Add 1/2 teaspoon of salt and 1 cup of all-purpose flour.
- Stir that in until it’s combined.
- Add 1/2 cup of mini chocolate chips into my batter.
- Stir that in.
- Take a 9 by 13 baking dish.
- Lightly grease the bottom and sides of this with some baking spray.
- Alternate dropping each batter into the pan.
- Use a butter knife just to swirl the batters together.
- Make sure we fill in any gaps, and try to keep this batter nice and even on top.
- Top my brookies off with a few extra chocolate chips.
- Place them into our 350 degree Fahrenheit oven.
- Bake for about 35 to 40 minutes.
- Let these brookies cool completely in their pan before digging in.
Cooking Tips
We want them at room temperature so they don’t shock that butter that we already melted. The best way to tell that they’re done is if you insert a toothpick in the center. It should come out clean, or preferably with a few moist crumbs. Do not over bake these brookies, or they will be dry and crumbly. Make sure we fill in any gaps, and try to keep this batter nice and even on top. And by that I just mean you don’t want to have a big pile of batter in one place, and really shallow amount of batter in another.
Serving Suggestions
Now all that’s left to do is let these brookies cool completely in their pan before digging in. Man, this is still warm, but it looks so good.
