Chicken Broccoli Parmesan Fritters
Hi, I’m Diane Kometa, and today on , I’m making chicken broccoli parmesan fritters.

Really great as a snack, main meal, or you can serve them as an appetizer.

Ingredients
- some panko breadcrumbs
- minced garlic
- milk
- eggs
- chicken, it’s been diced
- some broccoli florets
- some all-purpose flour
- some salt
- onion powder
- baking powder
- some finely grated fresh parmesan cheese
- some fresh ground black pepper
- some olive oil
- some vegetable oil

And this is such a simple, simple, delicious dish.
And I just kind of came up with it one day when I was sitting there and was kind of having the munchies.
Is mmm an ingredient?
I think it is.
I put some of that in here.

Instructions
- Go with the broccoli and chop it up.
- Chop it up nice and fine.
- Take the dry ingredients and mix these together.
- Take my eggs and put those into the bowl.
- Lightly whisk these.
- Take my wet ingredients and put them in here.
- Put everything else in here.
- Mix it together.
- Take my little spoon and kind of mix this.
- Sprinkle in this dry mixture.
- Add some vegetable oil and some olive oil into the preheated pan.
- Make little fritters like this on my spoon.
- Put them into the breadcrumbs.
- Coat them.
- Lift them right back out again.
- Put them right in.
- Give it a little press down like that.
- Flip that over.
- Be careful as you flip them.
- Let them get nice and brown like that.
- Take them and move them over.
Cooking Tips
The vegetable oil has a higher cooking temperature.
That’s why I’m putting that in there.
Just lighten it up with a little bit of olive oil.
Don’t worry if they seem like they’re falling apart.
Just give it a little bit.
Because that’s normal.
It’ll all just come together.
It’s going to be super crispy and nice.
The wire rack works well because it keeps them up so that there can be some air circulating under it.
You could put them on a plate too.
But I just prefer to do it this way because it keeps them a little bit more crispy.
Serving Suggestions
I made this little sauce for them.
It’s a garlic lemon aioli.
You could just put like a little fresh grated Parmesan cheese on these right after they’re cooked and they’re still hot.
That would just kind of like, you know, really compliment them.
But so does this sauce.
