Hey there, it’s Steve from , and in this video I’m going to show you my revision of the Viral Cottage Cheese Flatbread. When I released my video of the first time I tried making the Viral Cottage Cheese Flatbread, I got a lot of really snarky replies about how I didn’t follow the recipe. Well, I did follow a recipe.

Why You’ll Love This

The cool thing about failure, though, is that oftentimes it is the inspiration for other people.

My goal with creating this new process was, what can I do to create consistent results with the easiest recipe possible, and be something that I could make in bulk?

And what I came up with are these little mini flatbreads. They’re nice and pliable, you can see it’s not cracking.

If I wanted, I could fill this up with some pulled pork or something.

Or I could take two of them and put a sausage patty in there with cheese.

If you’ve tried the viral cottage cheese flatbread and either it didn’t work for you or you just felt it was a little too much work for the payoff, maybe give this a try.

Ingredients for Mini Cottage Cheese Flatbreads

Ingredients

  • one cup of full-fat cottage cheese or 285 grams
  • two large eggs
  • everything bagel seasoning
  • one half teaspoon seasoning
  • avocado oil

Instructions for Mini Cottage Cheese Flatbreads

Instructions

  1. We’ll start with one cup of full-fat cottage cheese.
  2. two large eggs.
  3. And then we’re going to process this for about 10 to 20 seconds or until it’s mostly smooth.
  4. Then using a spatula, I’m going to scrape down the edges and give this probably another five seconds.
  5. After that, I’m going to add my seasoning.
  6. Give this another three or four pulses, and our batter is done.
  7. I’m using a silicone mold for buns or mini cakes.
  8. And I’m going to spray this with some avocado oil.
  9. So once I spray each one of the compartments, I’m going to have to give it a little rub down with my fingertip here.
  10. And then I’m going to divide this batter evenly among all six compartments.
  11. Then I’m going to tap this on the counter a few times, just to get rid of any air bubbles, make sure everything is settled.
  12. And then this will go into my oven, preheated to 350 degrees or 175 degrees Celsius for 25 minutes.
  13. At the halfway point, 12, 13 minutes in, I’m going to rotate this just to account for any hot or cold spots that might be in my oven and make sure that they cook hopefully pretty evenly.
  14. After the full 25 minutes has elapsed, I’m going to take this out of the oven and you can see that they’ve kind of puffed up a little bit, almost like a souffle, but we’re going to let this rest for five minutes and these will shrink down.
  15. You can see how these have shrunk down nicely and they’ve cooled off enough that I can flip them over and cook the other side just briefly.
  16. So after I flip all six of them, I’ll pop this back into the oven for an additional five minutes.

Season however you want. However, I do recommend limiting yourself to one half teaspoon, as a little goes a long way.

At the halfway point, 12, 13 minutes in, I’m going to rotate this just to account for any hot or cold spots that might be in my oven and make sure that they cook hopefully pretty evenly.

We’re going to let this rest for five minutes and these will shrink down.

The underside is still a little bit moist. So after I flip all six of them, I’ll pop this back into the oven for an additional five minutes.

If you’re wondering, couldn’t you just do this in a waffle iron and make a chaffle? Maybe, but the great thing about this process and recipe is that you can do them in bulk.

If I want to do, say, 12 at a time, not a problem, just two cookie sheets.

If you can find any sort of cooking tray or baking sheet that has got an internal dimension of 13 and a half by nine inches, these fit in there perfectly.

You could do four of these, two per shelf in your oven and make 24 of these buns or whatever you want to call them at once.

Then if you want, just stack them up with a little pieces of parchment paper or wax paper in between them, throw them in a Ziploc bag, freeze them, and you’ve got breakfast sandwich buns on demand.

As for reheating, you can do this in a microwave or just pop a couple in the toaster.

Serving Suggestions

If I wanted, I could fill this up with some pulled pork or something.

Or I could take two of them and put a sausage patty in there with cheese.

Then top it with some sausage, a little cheese, and throw a lid on it. Either side is fine. There’s your breakfast sandwich.

It’s like a sausage McMuffin, just without the muffin.
