Hello from Seoul. If you have some ground beef and potatoes lying around, congratulations! You are officially ready for one of the simplest and most delicious stir-fries of your entire life.
Today, we’re gonna be making beef and potatoes, one of my all-time favorite stir-fry dishes.

Ingredients

Ingredients for ground beef and potatoes stir-fry

  • ground beef
  • potatoes
  • garlic
  • ginger (a small knob, about one teaspoon)
  • green onions
  • bell peppers (about a quarter cup)
  • cilantro (optional)

For the sauce:

  • soy sauce (three tablespoons)
  • oyster sauce (one tablespoon)
  • sugar (one and a half tablespoons)
  • chicken bouillon powder (one teaspoon)
  • dark soy sauce (half a teaspoon)
  • Shaoxing wine (two tablespoons)
  • black pepper (a few shakes)
  • cornstarch (one tablespoon)
  • water (a quarter cup)

For cooking:

  • oil (two tablespoons, one tablespoon)
  • salt (a pinch)
  • sesame oil (half a tablespoon)

Instructions

Cooking process of ground beef and potatoes stir-fry

  1. First, cut one pound of potatoes into small bite-sized cubes.
  2. Next, cut some bell peppers into small bite-sized pieces.
  3. Smash three cloves of garlic and finely chop them.
  4. And then grab a small knob of ginger and grate it.
  5. Lastly, thinly slice three green onions.
  6. Make sure to keep the whites and greens separate.
  7. In a small container, add three tablespoons of soy sauce, one tablespoon of oyster sauce, one and a half tablespoons of sugar, one teaspoon of chicken bouillon powder, half a teaspoon of dark soy sauce, two tablespoons of Shaoxing wine, a few shakes of black pepper, one tablespoon of cornstarch, a quarter cup of water, and give it a good stir.
  8. In a large wok or pan, add two tablespoons of oil and heat it over medium-high heat.
  9. Once it gets nice and hot, add in the potatoes and season with a pinch of salt.
  10. And then let them sear for about eight minutes or until they’re beautifully golden brown.
  11. Once the potatoes are cooked through and crispy, remove from the wok and set them aside.
  12. Now, in the same wok, add one tablespoon of oil and heat it over high heat.
  13. Once it gets nice and hot, add one pound of ground beef and spread it out evenly.
  14. And then let it sear for about one to two minutes.
  15. Once the bottom is nicely browned, flip, break up the beef, and stir fry for about three minutes.
  16. Make sure to stir it like this.
  17. When the beef is beautifully cooked and you’ve got some fat from the beef, add the garlic, ginger, white parts of the green onions, and saute those for about one to two minutes over medium-high heat.
  18. Add the potatoes, bell peppers, and stir fry them for about one minute.
  19. Give the sauce a quick stir and pour it in.
  20. And then stir fry everything together for about one minute.
  21. Turn the heat off.
  22. And then to that, add half a tablespoon of sesame oil and give it a final mix.

Cooking Tips

If pan frying feels like too much work for you, then you can always toss the potatoes into an air fryer.
Or if you want to take them to the next level, you can also try shallow frying or deep frying.
That’s going to give you extra crispiness and incredible flavor.
When the fat from the beef meets our lovely aromatics, it will create an incredible fragrance and flavor.
So do not ever skip this step.
Cornstarch always sinks to the bottom, so make sure to stir the sauce before you add it in.
Otherwise, you won’t get that gorgeous glossy look that you’re looking for.

Serving Suggestions

Let’s put them on a serving plate and finish it off with some green onions.
And if you happen to have some cilantro lying around, sprinkle a little bit at the end.
