Herbed Baked Eggs

So today I’m going to teach you how to make herbed baked eggs.
These are perfect to serve at a brunch, perfect to have for breakfast, or just to have, I like to have breakfast any time of the day, but this is one of my favorite ways to treat friends when I have them over for brunch, or like if they stayed over and I need to serve them eggs in a really fancy, special way, this is how I make it.

Ingredients
- Really good quality feta
- One roasted, fire roasted red pepper
- Some salt and black pepper
- A tablespoon of olive oil
- A tablespoon of heavy cream
- Three eggs (for one person)
- Two or three fresh basil leaves

Instructions
- So what you want to do is first set your oven to broil.
- You’re going to need a nice ramekin.
- Move this on the side.

Cooking Tips
Just remember, make it with whatever you have at home that can be stuck under the broiler.
And that’s important that you don’t break them right into the ramekin that’s going to come out of the oven, because you want your eggs to be whole.
You don’t want them to, sometimes they break, you know, and the yolk starts to run.
You don’t want to overdo it with the herbs.
If you don’t have basil leaves, go ahead and use your favorite herb.
You can use dry herbs here, too.
So you can use dried dill or fresh dill.
Whatever herbs you like, go ahead and use them.
The donis is my favorite.
It’s a sheep’s milk feta.
Please try and find it.
If not, go ahead and get regular cow’s milk feta.
They’re already ready in a jar.
They do a great job at it, so I don’t want to go through the hassle.
I buy them ready.
I love the way basil goes with this combination of feta and the roasted red pepper.
