Now this is an exciting one, but also a little nerve-wracking. There’s a lot of interesting ingredients in this and I’m hoping it comes out good. Here’s our first one. It’s cottage cheese. So cottage cheese, pretty trendy right now in the realm of keto and I’ve been doing quite a few recipes with cottage cheese and you guys seem to love them. But these seem to be trending the most right now.

Because I love Doritos. And it’s probably one of the things I miss most. I miss most when I do keto would be the Dorito, normal Doritos, like nacho cheese or Cooler Ranch. I also think one of the keys to success in any sort of diet would be sustainability. So you have to be able to find things you can enjoy, snacks, things like that. Otherwise, you might go off the rails. Fried, they might be better than a Dorito. I literally think I like that better than a Dorito, the fried one. I love the fried ones. The fried ones, if I had a thing of those in my pantry, like an airtight container, next to a thing of Doritos, I would go with these literally every time. They’re better than Doritos.

For the Dough

  • one cup and a half of cottage cheese
  • one cup of almond flour
  • one tablespoon of whey protein isolate (100% sugar-free, zero-carb protein)
  • one tablespoon of psyllium husk powder
  • one tablespoon of cheese powder (cheddar cheese powder)
  • one teaspoon of xanthan gum
  • one teaspoon of smoked paprika
  • half a teaspoon of onion powder
  • half a teaspoon of garlic powder
  • half a teaspoon of chili powder
  • quarter teaspoon of salt
  • one tablespoon of olive oil

For the Seasoning

  • two tablespoons of the cheddar cheese powder
  • one teaspoon of your smoked paprika
  • Half a teaspoon of both garlic powder and onion powder
  • quarter teaspoon of chili powder
  • Half a teaspoon of salt
  • quarter teaspoon of each of these, which is cumin and pepper, standard pepper

Instructions

Instructions for making keto Doritos

  1. Strain the cottage cheese.
  2. Blend the cottage cheese so that it’s smooth.
  3. Grab a bowl, and we’re gonna mix our dry ingredients.
  4. Add the cottage cheese in there.
  5. Add a tablespoon of olive oil.
  6. Mix this up until it forms a dough.
  7. Take two pieces of parchment paper.
  8. Take our dough.
  9. Put one piece of parchment paper over top.
  10. Push it down first.
  11. Roll it out.
  12. Peel away the top.
  13. Take a pizza cutter and cut it into triangles.
  14. Use a parchment-lined baking sheet.
  15. Put the Doritos on that baking sheet.
  16. You can cook them in the oven for about 15 minutes in the oven or fry some in avocado oil.
  17. To fry, put avocado oil in a saucepan.
  18. Put some of these in there and try to fry up some keto Doritos.
  19. Give ’em a second.
  20. Flip ’em before you burn.
  21. Take ’em out.
  22. For the seasoning mix, take two tablespoons of the cheddar cheese powder, and then add that to the bowl.
  23. Then one teaspoon of your smoked paprika goes in with the cheddar cheese.
  24. Half a teaspoon of both garlic powder and onion powder go into the mix.
  25. Then a quarter teaspoon of chili powder.
  26. Half a teaspoon of salt.
  27. Then a quarter teaspoon of each of these, which is cumin and pepper, standard pepper.
  28. Mix that all up.
  29. Take our fried ones, throw ’em into the mix, and toss ’em.

Cooking Tips

If you’re going for a Dorito, you want it to be pretty dry. My suggestion, if this turns it into a dough, is we start with a cup and a half of cottage cheese, not just a cup. That way, when you strain it and you lose a bunch of liquid, it won’t be detrimental to the recipe. Use a lot of parchment paper, because you need a lot of space to roll this out. You can add cayenne pepper if you want spicy Doritos, like hot Doritos. The crisp is really good on those ones. I am thinking frying is the way to go. You know how you always look for the chip with extra seasoning? Well, you can just create them yourself.
