Bagel’s my favorite food. And if I were to do a low carb diet, it’s the one thing I wouldn’t wanna give up. So I wanted to see if it’s possible to have bagels on a low carb diet. The net carbs on these bagels are 4.87 carbs in each bagel, which seems very low to me. Like a good thing.

It’s an easy seeming recipe. You get to see my real first reaction to something, whether it’s negative or positive. That’s a good mindset to be in. You can be mad at yourself for making the mistake or proud of yourself for realizing you made the mistake.

Ingredients

Ingredients for Cottage Cheese Bagels

  • 1 cup cottage cheese
  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 tablespoon apple cider vinegar
  • Optional toppings:
    • Everything bagel seasoning jalapeno
    • Standard everything seasoning (not spicy)
    • Poppy seeds
    • Sesame seeds

Instructions

Making Low Carb Cottage Cheese Bagels

  1. Start by putting your oven at 375.
  2. In a blender or food processor, blend the cottage cheese ’til smooth.
  3. Get all this cottage cheese into your mixing bowl.
  4. Add one cup of almond flour to an empty bowl.
  5. Add two tablespoons of coconut flour.
  6. Add two teaspoons of baking soda.
  7. Add one teaspoon of salt.
  8. Mix the dry ingredients up.
  9. Add the cottage cheese.
  10. Add two large eggs.
  11. Add one tablespoon of apple cider vinegar.
  12. Mix it all up.
  13. Take a cookie sheet with parchment paper.
  14. Wet your hands.
  15. Make six little piles here.
  16. Shape them into a ball.
  17. Flatten them a little bit.
  18. Make a hole in the middle for the bagel-y.
  19. Put toppings on ’em.
  20. Place in the oven at 375 for 20 to 25 minutes.
  21. Bake for 20 to 25 minutes until the bagels are golden brown and firm to the touch.
  22. Allow the bagels to cool.

Cooking Tips

You have to have the wet and dry separate sometimes. ‘Cause in baking, it’s a bit of a science, or so they tell me. And it’s important to get that baking powder and salt in all the dry ingredients, I think.

Stack a dough higher, and they’d be thicker.

Serving Suggestions

You could just slide it in the toaster like that and slather some cream cheese on the bottom and try it.

We’re gonna toast ’em. We’re gonna cheese ’em.

You can see it really does look like a bagel, feels like a bagel, tastes like a bagel. I’d say if you’re low-carb, keto, anything like that, definitely try these. Very good. Nice change of pace with your keto diet to have the cottage cheese, low-carb bagel.
