One Pot Meatballs and Rice

This is my one pot meatballs and rice and I think you’ll find that children really enjoy this dinner as well. It’s super delicious. I really hope you enjoy it. This is a really good family one pot dish. We all love this one. Really simple and easy. My mouth is actually watering thinking about this dinner tonight. It’s got loads and loads of flavor in there. Super delicious.

Ingredients
- a few chilli flakes
- sun-dried tomato pesto (around a tablespoon)
- sun-dried tomatoes
- peas
- mushrooms
- red pepper
- beef meatballs
- a small amount of onion
- spray oil
- a tablespoon of tomato puree
- a teaspoon of dried oregano
- a little bit of parsley
- 250 grams of basmati white rice
- a tablespoon of Worcestershire sauce
- a beef stock cube
- 100 milliliters of tomato passata
- Parmesan cheese

Instructions
- Turn on your pot to sear and saute.
- Go in with some spray oil on the bottom.
- Brown the meatballs.
- Cook off the raw onion a little bit as well.
- Turn off the sear and saute.
- Add some sun-dried tomato pesto.
- Use part of the liquid to clean this out because we want to use all of that.
- Add a tablespoon of tomato puree.
- Add about a teaspoon of dried oregano.
- Add a little bit of parsley.
- Stir that in to those flavors that we’ve got there.
- Add a tablespoon of Worcestershire sauce.
- Add a beef stock cube over the rice.
- Add 100 milliliters of tomato passata.
- Switch over to your pressure cook options.
- Make sure your pressure valve is on seal, not vent.
- You want a natural release and just five minutes.
- Add in our peas.
- Stir it through like this.
- Add your Parmesan and let that melt through the rice.

Cooking Tips
- You can definitely add extra ingredients.
- You can put a little bit of spice in this if you want to.
- You can add just a few chilli flakes.
- You can definitely use sun-dried tomatoes in this if it’s your preference.
- You can change it up. You could maybe add in some mushrooms or you could go with some red pepper.
- I like to be on around level four for searing and sauteing. I find that that works quite nicely for this type of dish.
- It’s up to you what vegetables you use in this dish.
- If you don’t have a sun-dried tomato pesto, maybe you have some sun-dried tomatoes in your fridge. Chop those up, put those in. That will be absolutely delicious.
- Always looks like a lot of liquid when you’re cooking a dish like this with rice. But believe me, that liquid is seriously going to disappear.
- I’m not going to add my peas in until the end.
- Don’t worry that those meatballs are still raw. They’re going to be cooked lovely. They’re going to be lovely, soft and tender. And the rice will be really well cooked.
- Peas won’t take much just to finish off defrosting.
- It’s up to you how much Parmesan you put in really.
