Ingredients

  • chicken
  • garlic
  • green onions
  • unsalted butter
  • broccoli (optional)

For the chicken marinade:

  • one pound of boneless, skinless chicken breast
  • half a tablespoon of soy sauce
  • one tablespoon of mirin
  • a quarter teaspoon of white pepper
  • a quarter teaspoon of baking soda
  • one tablespoon of oil
  • two tablespoons of cornstarch

For the sauce:

  • one tablespoon of soy sauce
  • two tablespoons of oyster sauce
  • two tablespoons of honey
  • one tablespoon of mirin
  • one tablespoon of lemon juice
  • half a teaspoon of dark soy sauce (optional)
  • one teaspoon of chicken bouillon powder
  • a quarter cup of water
  • a few shakes of black pepper
  • one tablespoon of cornstarch
  • lemon zest (optional)

For cooking:

  • two tablespoons of oil
  • two tablespoons of unsalted butter

For serving (optional):

  • chili flakes
  • steamed broccoli
  • green onions
  • toasted sesame seeds

Ingredients for chicken marinade and sauce

Instructions

  1. Take one pound of boneless, skinless chicken breast and cut them into bite-sized pieces.
  2. To the chicken, add half a tablespoon of soy sauce, one tablespoon of mirin, a quarter teaspoon of white pepper, a quarter teaspoon of baking soda, one tablespoon of oil, two tablespoons of cornstarch, and give it a good massage.
  3. Smash five cloves of garlic and finely chop them.
  4. Take three to four green onions and thinly slice them.
  5. Keep the green onions separate for garnish.
  6. In a small container, add one tablespoon of soy sauce, two tablespoons of oyster sauce, two tablespoons of honey, one tablespoon of mirin, one tablespoon of lemon juice, half a teaspoon of dark soy sauce, which is optional, one teaspoon of chicken bouillon powder, a quarter cup of water, a few shakes of black pepper, one tablespoon of cornstarch, and give it a good mix.
  7. In a large wok or pan, add two tablespoons of oil and heat it over high heat.
  8. Once it gets nice and hot, add the marinated chicken, spread it out in a single layer, and then let it sear for about one minute or until the bottom turns beautifully golden brown.
  9. Once the bottom turns beautifully golden brown, flip and stir fry for another three to four minutes.
  10. When the chicken is cooked through, you can remove it from the wok and set it aside.
  11. Now, in the same wok, add two tablespoons of unsalted butter and heat it over medium-high heat.
  12. Once the butter is melted, add the garlic, white parts of the green onions, and stir them around for about one to two minutes.
  13. Once the garlic starts turning golden and your kitchen is filled with the amazing aroma, give the sauce a quick stir and pour it in.
  14. Stir everything together for about 30 seconds or until the sauce gets nice and thick and shiny.
  15. Set the chicken back into the wok and give it a good toss until everything is coated in that nice glossy sauce.

And if you slice it against the grain like this, you’ll get way more juicy and tender chicken.

If you don’t have mirin, just use any cooking wine you have.

If you want more garlic flavor, go ahead and use more.

Here, if you’re using fresh lemon, adding some lemon zest will be a great option. It will add a nice brightness to the sauce.

Make sure you keep the high heat to get a nice sear, not steam.

By the way, if you want to add a little extra heat to this dish, then adding some chili flakes would be a great option too.

Serving Suggestions

You can simply serve it on a plate, but Claire loves eating her chicken stir-fry over rice. So I’m going to plate it this way.

And then nicely place some steamed broccoli on the side.

And last but not least, let’s finish it off with green onions and toasted sesame seeds.

I like eating this with rice, but I think it’s a late-night snack. If you’re hungry at night, but you don’t want to eat carbs, then you can make this and have a drink with beer. It’s a very nice snack or late-night snack. It’s all up to you.
