Now I run home on my lunch break to get this meal prepped.

It’s going to be a slow cooker Cajun chicken alfredo.

The thing I love about this crock pot is it automatically kicks up to warm when it’s done cooking, so it stays warm.

Definitely, if you just want to sear it real quick in the morning before you go to work, throw it in a crock pot, set it to a low setting to where it cooks throughout the day while you’re at work, easy peasy, right?

Ingredients

Ingredients for Cajun Chicken Alfredo

  • 1 beef smoked summer sausage (sliced)
  • 1 tablespoon olive oil
  • 1 chicken breast
  • Butter (for seasoning)
  • Garlic (for seasoning)
  • 2 cups heavy cream
  • 3 cups chicken broth
  • 4 tablespoons butter
  • 2 teaspoons minced garlic
  • 1/2 teaspoon salt
  • Cajun seasoning
  • Black pepper
  • 1/2 cup hot water
  • 1 16-ounce container penne pasta
  • 5 ounces shredded or grated Parmesan cheese

All right, so the chicken is cooked perfectly, but slicing it’s going to be an issue.

So it’s literally falling apart.

Now, I’m not sure the chicken, this is the best I’ve ever made chicken out of the crock pot.

Normally it’s really dry, but this was so tender and so juicy.

But this time I was wanting it to actually slice rather than shred.

All right, folks, that was really good.

Maybe could have went a little heavier with the Cajun seasoning, but very good nonetheless, nice and creamy.

But I feel like, because we did a creamy Cajun chicken penne pasta type dish not that long ago, right, where we cooked everything on the stovetop.

For the amount of work that went into this one, I think I’d have to stick to the stovetop one.

We still had to sear the chicken and then put it in.

Instructions

Step-by-step Instructions for Cajun Chicken Alfredo

  1. Take this summer sausage here.
  2. Cut this into slices, about one inch or so, however you want to cut it.
  3. Cut them into little slices like that.
  4. Put that in the crock pot for now.
  5. Put about a tablespoon of olive oil into a skillet, and I’m going to turn it on to a high heat.
  6. Take this one chicken breast.
  7. Put that in the skillet, and I just want to quickly sear each side of this chicken breast.
  8. Season the top of it with some butter.
  9. We just flipped it, and we’re going to season this side with some garlic.
  10. Put that whole chicken down in the crock pot.
  11. Add two cups of heavy cream into the crock pot.
  12. Add three cups of chicken broth.
  13. Add four tablespoons of butter.
  14. Just set it in there on top.
  15. Add two teaspoons of minced garlic.
  16. Add half a teaspoon of salt.
  17. Sprinkle in some Cajun seasoning.
  18. Sprinkle that along the top.
  19. Lastly, some black pepper.
  20. Cook this on high for four hours.
  21. Pull this chicken out of the crock pot.
  22. We’re just going to kind of chop it up here.
  23. Set this plate to the side.
  24. Add half a cup of hot water to the crock pot.
  25. Pour in one full 16-ounce container of penne pasta.
  26. Kind of give that a little stirring here.
  27. Set our crock pot to high heat for about 30 minutes or until the pasta has softened up.
  28. Scrape that chicken back into the crock pot.
  29. Mix this in.
  30. All nice together.
  31. Sprinkle that in.
  32. Mix this shredded, grated Parmesan cheese all in together with the pasta and the chicken.
